This aioli is bright and creamy and pairs perfectly with salmon cakes! The dill brings out a fresh herbaceous quality and compliments the delicate flavor of the salmon perfectly. The Dijon and lemon add a fresh acidity to balance out the richness of the mayonnaise. While I do adore this with salmon cakes, it goes well with tuna or crab cakes too (or just about any seafood for that matter). I even have been known to put this aioli straight on baked salmon!Â
Lemon, Dijon, & Dill Aioli

Ingredients:
1 Cup mayonnaise, homemade
¼ Cup Dijon mustard
1 Lemon, zested and juicedÂ
2 Tbsp. dill, fresh, chopped
Salt, TT
Black pepper, TT
   Method Of Prep:
- Gather and prepare all ingredients.

- In a small bowl add mayo, Dijon, lemon zest and juice, dill, salt and pepper.
- Mix to evenly distribute ingredients.
- Taste for seasonings, and adjust if needed.
- Serve with Dill Salmon Cakes.
- Store in an airtight container in the refrigerator for up to a week.
