Grilled Green Bean and Bacon Salad

This grilled green bean salad is the perfect ode for the end of summer! Peak season green beans charred to perfection accompany sharp red onion, sweet tomatoes, and savory bacon in a bright citrus vinaigrette. Across the board, it’s sure to be a crowd favorite! Keep in mind that bacon has to be cooked very crisp and should only be consumed once or twice a week. It also should be sugar-free and minimally processed (uncured). If you can find bacon that is not smoked, that’s even better as the smoking process almost always adds sugar. This salad should be eaten the day it is made to keep the bacon crispy and the red onion firm. Do yourself a favor and make a double batch, it’s that good! 

Grilled Green Bean and Bacon Salad

Ingredients:

For the Salad: 

½ lb. bacon, uncured and sugar-free 

1 lb. green beans

1 Tbsp. olive oil

1 cup cherry tomatoes, halved 

1 small red onion, sliced thin 

 

For the Lemon Vinaigrette: 

2 lemons, juiced (¼ cup) 

⅓ cup olive oil

1 tsp. Dijon mustard 

2 cloves of garlic, grated or minced 

1 Tbsp. honey  

½ tsp. salt 

¼ tsp. black pepper 

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 350°F. Preheat your gas or charcoal grill to 450°F.
  3. Grab a sheet tray and place a rack on top.
  4. Place bacon on a sheet tray with a rack to ensure even crisping.
  5. Bake for 12-15 minutes or until cooked through and very crispy.
  6. Remove from the oven and set aside.
  7. While your grill is preheating, snap your green bean tops off and discard them.
  8. Place in a bowl and coat in olive oil and add salt, set aside.
  9. Next, slice tomatoes and red onion, place in a bowl together and set aside.
  10. Now that your bacon is cooled, chop it up and place it in the bowl with tomatoes and red onion, set aside.
  11. Once the grill is preheated, place your vegetable grilling tray on the grill to heat up briefly.
  12. Add green beans and grill for 8-10 minutes, remembering to stir occasionally.
  13. Remove from the grill and place green beans in a large bowl to cool briefly.
  14. Now we can make the dressing. In a small bowl add all ingredients for the lemon vinaigrette and whisk until incorporated.
  15. Add tomatoes, red onion, and bacon to the green beans.
  16. Drizzle the lemon vinaigrette and toss to evenly coat. Serve immediately and enjoy!
