Quick and Easy Roasted Lemon Garlic Asparagus

Spring has sprung and with-it asparagus comes into season in full swing. Full of antioxidants, vitamins K, A, and foliate, this flowering perennial not only has important nutrients but a mild, earthy, and savory flavor that lends itself well to whatever you add. In this recipe, bright and citrusy lemon is accompanied by pungent garlic, rich olive oil, all surrounding tender perfectly cooked asparagus making an easy and flavorful side dish able to accompany almost any Spring meal with ease. Quick and Easy Roasted Lemon Garlic Asparagus

Ingredients:

2 bunches of asparagus, trimmed 

4 cloves of garlic, minced or grated 

2 Tbsp. lemon zest, (about 2-3 large lemons) 

1 oz. lemon juice, fresh (1 large lemon)

⅔ tsp. salt

½ tsp. black pepper  

2 Tbsp. olive oil  

1 Tbsp. chives or lemon balm, for garnish

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat your oven to 400°F. Line a sheet tray with parchment paper and set aside.
  3. Trim your asparagus ends and discard. If you aren’t sure where to cut to trim them, a good rule of thumb is to cut just above the bottom rubber band they are bunched in, or you can hold a single stalk and bend it ⅔ of the way down and see where it naturally breaks. You can then use that piece as a guide for the others.
  4. In a large bowl toss asparagus, garlic, lemon zest and juice, salt, pepper, and olive oil until evenly coated.
  5. Turn out onto your sheet tray and spread out into a single layer.
  6. Bake for 12-15 minutes or until tender.
  7. Remove from the oven and transfer to your serving dish.
  8. Garnish with chives or lemon balm, serve immediately and enjoy!
