Classic Creamy Dill & Lemon Cucumber Salad

Ingredients:
For the Salad:
4 large cucumbers, peeled and sliced in half-moons
1 cup red onion, sliced
2 Tbsp. dill, fresh, chopped
For the Dressing:
½ cup SCD 24-hour yogurt
2 Tbsp. dill, fresh, chopped
1 Tbsp. olive oil
1 Tbsp. lemon juice, fresh
2 cloves garlic, grated
1 Tbsp. honey
½ tsp. salt
¼ tsp. pepper
Method Of Prep:
- Gather and prep ingredients.
- Peel and slice cucumbers in half-moons, and place in a large serving bowl.
- Add in red onion and dill. Mix together and set aside.
- In a small bowl whisk together SCD yogurt, dill, olive oil, lemon, garlic, honey, salt, and pepper.
- Drizzle the dressing over the cucumber mixture and toss it together.
- Refrigerate to chill the salad for an hour or more. Alternatively, if the cucumbers are already cold when preparing, no refrigeration time is necessary.
- If chilling, remove from the fridge and toss one more time before serving.
- Serve immediately and enjoy!
