These apple, brie, and cranberry bites are the perfect easy holiday appetizer! Crisp, tart granny smith apples make the base of this elegant finger food. Followed by creamy rich brie, and sweet cranberry and orange jam. All topped with a sprig of earthy rosemary, it’s enough to make you say happy holidays! My favorite flavors of the season make the layers of this sophisticated, but simple appetizer. You can always make the jam a day or two ahead, and store it in the refrigerator for super simple entertaining. Remember to get brie that has been cut from a wheel, and not individual pieces as they will contain starch that is not allowed on SCD. Brie is an approved cheese, but it can only be consumed occasionally, so be sure not to overdo it. Feel free to sub out the apples for a different kind or use gruyere if you aren’t a fan of brie. Apple, Brie, and Cranberry Bites

Ingredients:
2 cups cranberries, fresh or frozen
1 orange, sliced
⅓ cup honey
2-3 granny smith apples, sliced
1 Tbsp. lemon juice, fresh
8 oz. brie, sliced thin
rosemary sprigs, for garnish
Method Of Prep:
- Gather and prep ingredients. We will start by making cranberry jam.
- In a small pot add cranberries, orange slices, and honey.
- Bring to a boil, and then reduce to a simmer.
- Continue to cook for 8-10 minutes or until it thickens up and cranberries pop.
- Remove from heat and discard orange slices. Allow it to cool.
- While the cranberry jam is cooling, fill a large bowl with cool water and add in your lemon juice.
- Slice your apples and place in the lemon water until ready to assemble your appetizer bites.
- Slice brie into small squares, and set aside.
- Now we are ready to assemble the bites. Drain your apple slices.
- On a large serving tray lay down apple slices.
- Add slices of brie on top of apples, then using a small spoon scoop and place some cranberry jam on top.
- Finally, garnish with a small sprig of rosemary.
- Serve immediately, and enjoy!
