This Asian inspired cucumber salad is cool, refreshing, and bursting with flavor! The combination of the spicy red onion with sweet bell pepper and toasted sesame is a perfect complement to the crisp cucumber. Even better? It couldn’t be easier to make! In under 15 minutes you’ve got a killer appetizer or side dish that’s sure to impress! I chose to peel the cucumber as those with IBD may have a hard time digesting the skin, but if you don’t feel free to skip that step and just slice them. You can also substitute the chili powder for red pepper flakes if you want more of a kick. This salad will stay good for two to three days in the fridge. Just remember to stir before serving as the dressing will naturally settle to the bottom. Try serving this alongside my Asian Pulled Chicken over cauliflower rice for a complete meal!

Ingredients:
3 Large cucumbers, peeled and thinly sliced
½ Red onion, thinly sliced
1 Small red bell pepper, seeded and small diced
¼ Cup champagne vinegar
3 Tbsp. Honey
2 tsp. Sesame seeds
1 tsp. Salt
½ tsp. chili powder
1 tsp. Sesame oil
Method Of Prep:
- Gather and prep ingredients.
- Start by peeling and slicing cucumber, place in a large bowl.
- Add in red onion and bell pepper.
- In a small bowl combine vinegar, honey, sesame seeds, chili powder, and sesame oil.
- Whisk dressing together.
- Pour over the cucumber mixture, toss to evenly coat.
- Serve immediately or refrigerate for 2 hours if you prefer it chilled. Enjoy!
