Citrus is in full swing in the winter months and not only provides extra vitamin C, but antioxidant and anti-inflammatory properties as well. This salad is SCD compliant as well as vegan and is a great option for an immune pick me up. The shades of orange, pink, and red provide the perfect backdrop for the bright green, creamy dressing. Sweet and sour citrus, peppery arugula, cool mint, and velvety green goddess dressing are the ideal combination, not to mention easier on the digestive tract than traditional salads with raw produce. Once you try this flavor combination you will be hooked! This is one of my favorite salads of all time, and I know you will enjoy it just as much as I do!

Blood Orange Citrus Salad with Green Goddess Dressing

Ingredients:
For the salad:
4 blood oranges, peeled and slicedÂ
2 oranges, peeled and slicedÂ
1 grapefruit, peeled and slicedÂ
3 cups arugulaÂ
2 Tbsp. mint, fresh and choppedÂ

For the dressing:Â
1 avocado, pittedÂ
1 bunch of parsleyÂ
2 cloves of garlic, peeledÂ
¼ cup chives
2 Tbsp. lemon juice, freshÂ
¼ cup olive oilÂ
1 Tbsp. apple cider vinegarÂ
1 tsp. salt
½ tsp. pepper
 Method Of Prep:
- Gather and prep ingredients.
- Start by peeling and slicing citrus. Cut off both ends, then using your chef’s knife cut off the sides of the peel. Next, slice the citrus fruit in rounds. Repeat until all citrus is cut and set aside.
- Now we will make our green goddess dressing.
- In your food processor add all ingredients for dressing and blend until smooth and fully combined, set aside.
- Now we are ready to assemble the salad.
- In a large salad bowl add arugula and citrus, gently toss.
- Drizzle with dressing and top with mint.
- Serve immediately and enjoy!
