Cilantro Lime Cauliflower ‘Rice’

This cilantro lime cauliflower ‘rice’ is flavor packed, easy to make, filling, and goes with just about anything. This side dish is full of Vitamins C and K, bright zesty lime, sweet onion, and herbaceous cilantro. Cauliflower is such a versatile ingredient and really takes on the citrusy flavors added. It offers a neutral base with great texture and is even rice sized. You can swap this easy SCD ‘rice’ for any rice dish. You can also substitute already riced cauliflower instead of ricing it yourself, just be sure to add some steaming time to your total cooking time if it is frozen, or thaw before using. With only eight ingredients and ready in just 30 minutes it’s the perfect side to let your main dish shine, while being a great complimenting companion.

                     

Cilantro Lime Cauliflower ‘Rice’

Ingredients:

1 large head of cauliflower (6 cups riced) 

2 Tbsp. olive oil

1 cup onion, diced 

4 cloves garlic, minced 

1 Tbsp. Lime zest (one large lime) 

1 Tbsp. lime juice, fresh (one large lime) 

½ cup cilantro, fresh and chopped (one bunch) 

¾ tsp. salt

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Start by breaking down your cauliflower head into florets, and discard the core.
  3. Set up your food processor with the standard blade attachment.
  4. Add in cauliflower florets and pulse 8-10 times or until cauliflower resembles rice, set aside. Depending on the size of your food processor, you may have to do this step in two parts.
  5. In a large pan add in olive oil and heat over medium-high heat.
  6. Add in onion and sauté until translucent 4-5 minutes.
  7. Add in garlic and sauté another 1-2 minutes.
  8. Next, add in your riced cauliflower and continue to cook until tender, 10-12 minutes. Be sure to add a lid with this last step, so the cauliflower steams and cooks evenly.
  9. Add in lime zest, lime juice, cilantro, salt, and pepper. Stir to incorporate.
  10. Taste, and adjust seasoning if desired. Remove from heat, serve immediately, and enjoy!
