Cranberry Relish

Christmas dinner for as long I can remember, included cranberry relish. A holiday classic and one of my favorites! Who doesn’t love tart cranberries and green apple intertwined with sweet citrus and crisp red apple encased by sugary strawberry gelatin? This is an adaptation of my Step Grandma’s recipe that I remember making with her and my Grandfather. Standing on a kitchen table chair I peered over the counter to help make the relish. My grandfather and I first used an old-fashioned cast-iron tabletop apple peeler to peel the apples and oranges. We would then use his cast-iron tabletop food grinder and put through the cranberries, apples, and oranges. All that grinding made for sore arms! Once we got them all ground, we would take it over to grandma to make the strawberry gelatin and put it all together. I remember being so excited to try it, it was hard to wait for it to set up! As dinner time approached, I helped set the table with nice china out of the hutch. We sat for the meal and finally there I was wide-eyed and spoon full of relish ready to devour. The wait was worth it! This updated version is every bit as good as I remember. I love this recipe, and I know you will too.         

Cranberry Relish

Ingredients:

2 Red apples, unpeeled, quartered, and cored

2 Green apples, peeled, quartered, and cored

2 Bags cranberries, fresh 

2 Oranges, peeled 

½ Cup honey 

1 Pint strawberries, fresh or frozen, halved, cooked, and pureed 

2 packets of unflavored gelatin 

1 Cup boiling water, filtered

1 Cup cold water, filtered

      Method Of Prep:

  1. Gather and prep ingredients.
  2. Set up your food processor with the standard blade attachment.
  3. Add red and green apples, cranberries, and oranges. You may need to blend in two batches.
  4. Pulse until it is all broken down to small seed size pieces, as it is a relish. Place in a large bowl.
  5. Next, add halved strawberries and honey to a small pot on medium heat.
  6. Cook until honey is dissolved and strawberries are broken down. It should be about 10-15 minutes.
  7. Puree in a high-speed blender or with an immersion blender.
  8. Strain through cheesecloth to catch the seeds. Set aside.
  9. Now, make your two packets of gelatin. Put cold water in a medium bowl. Sprinkle gelatin over it, stir until dissolved, about a minute.
  10. Pour your boiling water into gelatin water mix. Stir to dissolve completely, about 4-5 minutes.
  11. Add strawberry puree. Add strawberry gelatin mix in fruit relish and stir to combine.
  12. Refrigerate for at least four hours, or until set completely.
