Ingredients:Â
3 lbs. Brussel sprouts halvedÂ
1 Tbsp. lemon zest, freshÂ
2 Tbsp. lemon juice, freshÂ
1 tsp. salt
½ tsp. pepperÂ
2 Tbsp. olive oil
1 ¼ cup parmesan, grated from a block
 Method Of Prep:
- Gather and prep ingredients. Preheat the oven to 400°F.
- Wash, trim and halve Brussels. Place in a large bowl.
- Add in lemon zest and juice, salt, pepper, and olive oil.
- Toss to coat, turn out onto a sheet tray in a single layer. Roast for 20-25 minutes.
- While roasting, grate parmesan from the block and set aside.
- After time has elapsed, remove Brussels from the oven and using a spatula flip all the Brussels so that the cut side is now facing up.
- Then group them together so they are touching, but still in a single layer.
- Turn on your broiler to the high setting.
- Add grated parmesan on top of all Brussel halves.
- Return to the oven and broil the cheese until melted and crispy for 5-10 minutes. Be sure to keep an eye on it, as the cheese can burn easily.
- Remove from the oven to cool slightly. Serve immediately and enjoy!
