Easy and Refreshing Peach & Strawberry Bellini Mocktail

Happy almost first day of Summer! These peach and strawberry Bellini mocktails are the perfect way to celebrate and stay cool! Traditionally, peach Bellinis have a peach puree base and are topped with Prosecco. Created sometime between 1934-1948 in Venice, Italy this pinkish-hued cocktail became a sensation almost instantly, and remains a classic to this day. I wanted to recreate this cocktail with a fun twist, strawberries! Strawberries are now in season and brighten up almost any recipe with their sweet and juicy profile. They not only provide the sweetness of this mocktail, but they also give it a vibrant colored base as well. The strawberry and peach purees sit on top of each other and give a fun mosaic sand art vibe that is just as amusing for the kids as it is for the adults! Topped with club soda, you still get the bubbly ambiance of the classic cocktail, but without the alcohol. I recommend making these one at a time versus a whole pitcher, as the ice will melt and will separate the purees as it sits. Prosecco and Champagne are not SCD approved because of the yeast that is used to make them. However, if you partake feel free to swap the club soda with alcoholic bubbles. Easy and Refreshing Peach & Strawberry Bellini Mocktail

Ingredients:

2 cups strawberries, sliced 

¼ cup honey  

2 cups peaches, peeled and pitted 

1 cup apple juice, no sugar added 

16 oz. club soda

ice, for serving

4 peach slices, for garnish (optional) 

4 strawberries, for garnish (optional)

  Method Of Prep:

  1. Gather and prep ingredients.
  2. In a small pot add strawberries and honey. Bring to a boil, then reduce to a simmer.
  3. Cook for 8-10 minutes or until the strawberries are cooked through and resemble a jam.
  4. Set up your high-speed blender and puree the strawberry mixture, set aside to cool.
  5. Clean out your blender and set it back up. Add in peaches and apple juice.
  6. Blend until smooth, and set aside.
  7. Get glassware ready. Add 2 ounces of the strawberry puree to the bottom.
  8. Add ice on top. Pour 4 ounces of peach puree over ice.
  9. Top with 4 ounces of club soda and add your garnish.
  10. Serve immediately and enjoy!
