Easy Grain Free Waffles with Whipped Honey Cinnamon Butter

When most people think of celebrating Mother’s Day, brunch or breakfast in bed come to mind, and with good reason. Pampering mom by cooking a nice meal is one of the best ways to say thank you. Food is an act of love, and no one knows that more than moms. These easy grain free waffles are ready in fifteen minutes, have little clean up, and are easy and fun to make with little ones. If you happen to only have almond flour, don’t panic, you can still make these waffles. Just substitute the coconut flour for almond flour making it an even cup. Don’t forget that maple syrup is not allowed on SCD as it is a polysaccharide. However, a drizzle of honey on top of this cinnamon butter, and I promise you won’t even miss it! Easy Grain Free Waffles with Whipped Honey Cinnamon Butter

Ingredients:

For Waffles: 

¾ cup almond flour

¼ cup coconut flour

½ tsp. salt

¼ tsp. baking soda

2 tsp. cinnamon (optional) 

4 eggs 

½ cup water

1 tsp. vanilla extract

2 Tbsp. honey  

For whipped butter:

⅛ cup butter or approved butter substitute 

½ tsp. cinnamon 

1 Tbsp. honey  

      Method Of Prep:

  1. Gather and prep ingredients.
  2. Heat up your waffle maker on medium heat while making batter.
  3. In a large bowl add flours, salt, baking soda, and cinnamon. Whisk together.
  4. Add in eggs, almond milk, vanilla extract, and honey.
  5. Whisk together until blended well and batter forms.
  6. Grease the waffle maker with oil or butter, and fill squares about ¾ of the way full or according to directions.
  7. Close the waffle maker and cook until it says it is ready.
  8. Gently remove with a spatula or fork.
  9. Repeat until all the batter is gone. You will get approximately 5 waffle squares.
  10. While waffles are cooking, set up your stand mixer with the whisk attachment.
  11. Add in butter, cinnamon and honey.
  12. Whip at medium speed until fluffy, about 5 minutes.
  13. Serve waffles immediately and top with whipped honey butter. Feel free to drizzle with extra honey if desired. Enjoy!
