This is the perfect festive holiday drink that the whole family will love! Pomegranate has been used for centuries as medicine and for good reason. Containing more than 100 phytochemicals this powerful fruit helps with cancer prevention, heart disease, diabetes, arthritis, blood pressure, and memory to name a few. Just be sure to get pomegranate juice that is not from concentrate and has no added sugars. On that note, make sure your orange juice has the same! This fun beverage combines some of my favorite flavors and will get you in the holiday spirit! Tart pomegranate is balanced out by citrusy orange juice, and sweet honey simple syrup. Add the earthy aroma and flavor of the rosemary all accompanied by bubbly club soda and you’ve got a homerun mocktail. If you are experiencing active disease, I would suggest omitting the fresh pomegranate seeds, as they may cause irritability. As this is a mocktail, feel free to add vodka to make it a grown-up-only drink if you partake. Cheers to the holidays!

Ingredients:
½ Cup honeyÂ
½ Cup waterÂ
1 Tbsp. rosemary, fresh and chopped
12 oz. pomegranate juice, no sugar added not from concentrateÂ
8 oz. orange juice, not from concentrate
16 oz. club sodaÂ
4 sprigs of rosemary, for garnish Â
¼ cup Pomegranate kernels, for garnish (optional)
 Method Of Prep:
- Gather and prep ingredients.
- In a small pot add honey, water, and a chopped tablespoon of rosemary.
- Bring to a boil. Let simmer for 4-5 minutes so the rosemary flavor infuses into the simple syrup.
- Turn off heat and whisk to ensure all the honey has dissolved, set aside to cool.
- Gather glassware and open up pomegranate if needed.
- Score sections being careful not to cut all the way through. Gently break open with your hands and scrape out seeds into a bowl of cool water. Once all the seeds are in the water, remove and discard floating pith pieces. Drain water, and now your seeds are ready to be eaten.
- Strain the simple syrup through a sieve to catch all the rosemary pieces. Now your simple syrup is ready to use.
- Put 2 ounces of simple syrup in each glass followed by 2 ounces of orange juice, stir to incorporate.
- Add 4 ounces of pomegranate juice on top, do not stir.
- Next, add 3 ounces of club soda and ice if desired.
- Garnish with rosemary sprig and pomegranate kernels. Enjoy!
