Simple & Quick Grain-Free Rosemary Biscuits

Flaky, buttery, warm biscuits accented by woodsy, pine-like fragrant rosemary. The perfect biscuit to impress friends and family alike.

These biscuits melt in your mouth and have the perfect classic biscuit texture. So much so your guests won’t even know they are grain-free!

The earthy rosemary compliments everything from the turkey to the stuffing. You can always replace the dried rosemary with another dried herb, like thyme. If you want your biscuits to be taller, as they will not really rise much in the oven, you could roll your dough out one inch thick, just remember they will take a few more minutes to fully cook.

Simple & Quick Grain-Free Rosemary Biscuits

Ingredients:

For the Biscuits: 

¼ cup of butter, cold and cubed

2 cups almond flour 

1 Tbsp. coconut flour

1 tsp. baking soda 

¼ tsp. salt

2 tsp. rosemary, dried 

1 egg, beaten 

1 tsp. apple cider vinegar 

1 Tbsp. honey

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 325°F and line a sheet tray with parchment paper and set aside.
  3. In a large bowl add butter and almond flour.
  4. Using your hands, rub the butter into the flour until it resembles breadcrumbs or sand.
  5. Add in your coconut flour, salt, baking soda, and rosemary. Mix gently to incorporate.
  6. In a small bowl add 1 whole egg, apple cider vinegar, and honey. Whisk together to incorporate and dissolve the honey.
  7. Add the wet to the dry and gently mix together until dough forms.
  8. Lay down a piece of parchment paper on the counter. Place dough on top, followed by another piece of parchment paper.
  9. Using a rolling pin, roll dough to ½ inch thick.
  10. Using a biscuit cutter cut out 10 biscuits. You will need to reroll the dough to get 10.
  11. Place on a lined sheet tray ½-1 inch apart. Bake for 15 minutes or until a toothpick has been inserted and comes out cleanly. Enjoy!
