I don’t know about you, but when the heat of summer hits I’m always looking for easy and light dishes that maximize flavor, but minimize effort. This watermelon salad certainly does just that! Juicy watermelon, cool cucumber, sweet mint, and herbaceous basil make the base of this salad. Tossed with bright lime juice, smooth olive oil, and rich honey these flavors perfectly complement each other, and use the freshest flavors Summer has to offer. Summer Watermelon Salad with Lime Honey Dressing

Ingredients:
For the Salad:
½ watermelon, cubed (about 5 cups)
2 cups cucumber, diced (1 large hot house cucumber)
2 Tbsp. mint, fresh and chiffonade (rolled & sliced into thin strips)
2 Tbsp. basil, fresh and chiffonade
For the Dressing:
2 Tbsp. honey
2 Tbsp. lime juice, fresh about 2 limes
1 Tbsp. olive oil
½ tsp. salt
¼ tsp. black pepper
Method Of Prep:
- Gather and prep ingredients.
- Start by cubing up your watermelon and placing in a large bowl, set aside.
- Next, chop up your cucumber and place in the bowl with the watermelon.
- Lastly, chiffonade your mint and basil, and place in the same bowl. To chiffonade your herbs, stack them on top of each other and roll them tightly together. Then take your knife and cut along the rolled herbs to make thin strips.
- Now we will make the dressing. In a small bowl whisk together honey, lime juice, olive oil, salt, and pepper.
- Drizzle over salad and mix gently to evenly distribute your ingredients.
- Serve immediately and enjoy!
