Almond Flour Banana Bread

Banana bread happens to be one of my husband’s favorite foods. Every time since childhood he has visited his Aunt, she bakes him a loaf and there isn’t much he holds dearer. So, you can imagine I was a little nervous to have him try it. (I didn’t even ask him to try the first few versions! It took several attempts to get it right.) But once I thought I had finally found the right balance I asked him to try a piece. He loved it! As a true connoisseur of banana bread my husband has high standards. If he likes it, I guarantee you will too! Feel free to add 1 cup of walnuts, or any other approved SCD nuts to the batter to give it an elevated flavor and texture. I opt to leave them out of mine only because I have a walnut allergy in my home. If you can add them, they really help the moisture balance in the bread, and ensures it doesn’t turn out overly wet and dense. However, the recipe is delicious as is too and will bake up just fine. It has my husband’s personal seal of approval!  

Almond Flour Banana Bread

Ingredients:

3 Overly ripe bananas, mashed

⅓ Cup coconut oil or butter, melted  

½ tsp vanilla extract

3 Eggs, beaten  

¼ Cup honey

2 Cups almond flour

½ Cup coconut flour

1 tsp baking soda

½ tsp cinnamon 

      Method Of Prep:

  1. Gather and prep all ingredients.
  2. Preheat the oven to 350° F.
  3. Grease a loaf pan with  butter or coconut oil. Set aside.
  4. Set up your stand mixer with the paddle attachment.
  5. Mash bananas and put in a stand mixer bowl.
  6. Add melted coconut oil or butter, vanilla extract, eggs, and honey.
  7. Mix on low for 1-2 minutes.
  8. In a medium bowl add together almond flour, coconut flour, baking soda, and cinnamon.
  9. Turn the mixer on low. Slowly add in the dry mixture about a third at a time until fully incorporated.
  10. Pour into the greased loaf pan. Bake for 55-60 minutes, or until you can cleanly remove a toothpick. Cool completely, slice with a bread knife.
  11. Serve warmed with a pat of butter or butter alternative, and enjoy!
