Happy first day of spring! Nothing says spring to me like the color green and a fun, refreshing, handcrafted drink! I have always loved mojitos and wanted to recreate that classic cocktail here but with a fun twist; kiwi! The true origins of the mojito are still disputed to this day. Some say it was a special tonic made for Sir Francis Drake in the 1500’s for scurvy. Others say it was invented by African slaves working in the cane sugar fields. “La Bodeguita del medio”, a bar in Havana, also says to have invented it, and even received Ernest Hemmingway’s personal praise for the drink. Either way it has its roots in Cuba, and is one of the most popular cocktails to this day.
The original recipe consists of sugar cane, lime juice, mint, rum, and club soda. (Although the first mojitos probably only had rum). I have kept the heritage of this refreshing cocktail, but have added a more tropical flavor with kiwi, and adapted it to be SCD compliant. I have chosen to make this version non-alcoholic, as rum should be avoided. Having said that, vodka is permissible on SCD in small quantities every once in a while. You can always substitute it in the place or rum if you want it to have alcohol. This drink will be the star of your next dinner party, picnic, or lazy Sunday afternoon. Cheers!
Virgin Kiwi Mint Mojito

Ingredients:
⅓ Cup honey
½ Cup water
6 Kiwis (1 peeled & sliced for garnish)
4 Oz. lime juice (two limes)
20 mint leaves (plus a few extra sprigs for garnish)
16 Oz. club soda
Method Of Prep:
- Gather and prep ingredients.
- In a small pot add honey and water. Bring to a boil and whisk together until dissolved. Set aside to cool.
- Next, set up your high-speed blender with the standard blade attachment.
- Add peeled kiwi and lime juice. Blend on high until smooth.
- Now we can gather glassware, and put together our mojitos! Add mint leaves first and muddle or tear them.
- Next, add 1.5 oz. of honey simple syrup to each glass.
- Now add 2.5 oz. of the kiwi mixture to each glass and stir.
- Lastly, add in ice and top with club soda.
- Garnish with a mint sprig and a slice of kiwi. Here’s to spring!
