This clean, refreshing, and slightly sweet mint sauce takes these radishes to another level! The peppery roasted radish is the perfect base to compliment the fresh mint’s sweetness. I do want to note that radishes should only be tried on the SCD diet after symptoms have disappeared. If you aren’t ready for radish, or don’t enjoy them, feel free to use just about any vegetable you like. I have found carrots, squash, and cauliflower do really well with the sauce, but feel free to be creative! This side dish is sure to dress up any meal, and couldn’t be simpler to make! Enjoy!
Roasted Radishes with Mint Sauce

Ingredients:
1 ½ lbs Red radishes, halved or quartered depending on size
2 Tbsp. olive oil
Salt, TT
For sauce:
2 Tbsp. olive oil
2 Tbsp. champagne vinegar, no sugar added
3 Tbsp. lemon juice
2 Tbsp. honey
½ Cup mint leaves, fresh and loosely packed
Salt, TT

Method Of Prep:
- Gather and prep ingredients.
- Preheat the oven to 375°F.
- In a large bowl, add radishes, olive oil, and salt.
- Toss to coat evenly, and turn out on a large sheet tray in a single layer.
- Place in the oven and roast for 15-20 minutes or until cooked all the way through.
- While radishes are roasting, prepare the mint sauce.
- In your high-speed blender add all ingredients for the sauce and blend until smooth, set aside.
- Once radishes have come out of the oven, place them in a large bowl and add mint sauce.
- Toss to coat, serve immediately and enjoy!
