Happy Cinco de Mayo! Celebrate today with this frozen, tropical, and sweet treat! This is a fun take on the classic frozen margarita but with an exotic twist. You guessed it, mango! While traditional margaritas have tequila and usually Cointreau, I have chosen to keep this version alcohol free. On the SCD diet, after all symptoms have disappeared, occasionally vodka may be used. Tequila and Cointreau are not permitted, because of their sugar content. However, I thoroughly enjoy this virgin margarita as is and I know you will too!      Â
Virgin Frozen Mango Margarita

Ingredients:
4 Cups mango, cubed & frozen (4-5 mangos)Â
â…“ Cup honey
½ Cup water
4 Oz. lime juice, about 4 limes
Flake or sea salt (for rim)Â
Pinch of chili powder (for rim)Â
1 lime, sliced (for garnish)
4 mango slices (for garnish)
   Method Of Prep:
- Cube mango and freeze for at least 3 hours. Alternatively, you can use already frozen mango if you’re in a hurry, but fresh is always the best.
- Once frozen, gather and prep ingredients.
- In a small pot add honey and water. Bring to a simmer until honey is completely dissolved.
- Cool this simple syrup slightly before using.
- Next, set up your high-speed blender with the standard attachment blade.
- Add in frozen mango, honey simple syrup, and lime juice.
- Blend on high until smooth.
- Now we can get the glassware ready. Start by rimming each glass with a piece of lime.
- Next, put flake salt and chili pepper on a small plate or bowl.
- Now turn the glass upside down and roll the rim in the flake or sea salt and chili pepper mix.
- Fill glasses with frozen mango mix and garnish with a mango and lime slice. Enjoy! Â
