Easy Parmesan Bacon Wrapped Asparagus Bundles

These elegant bacon-wrapped asparagus bundles couldn’t be easier and are sure to be a smashing success! Crispy bacon encapsulates the tender asparagus. A hint of bright citrus perfectly complements the crunchy and salty parmesan making for a symphony of savory flavors that are perfectly in key. Be sure to make and serve these the same day, as the bacon and parmesan will lose crispness after refrigeration. One of my favorite things about this side dish, besides the flavors, is that each serving is already bundled, making it a cinch to serve or pass around the table! Remember that for SCD, bacon must be very crispy and only be consumed once a week. Parmesan as well should only be consumed occasionally, which makes this combination an extra special treat! Easy Parmesan Bacon Wrapped Asparagus Bundles

Ingredients:

¾ Lb. bacon, uncured and sugar-free 

2 bunches of asparagus, washed and trimmed

2 Tbsp. olive oil 

1 Tbsp. lemon zest

2 Tbsp. lemon juice

½ tsp. salt

¼ tsp. pepper  

4 oz. Parmesan, cut from block and shredded

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 375°F.
  3. On a large sheet tray lay out bacon in a single layer. Par cook for 10-12 minutes or until halfway cooked, but still flexible.
  4. Remove from the oven to cool, while we prep the asparagus.
  5. Wash and trim asparagus spears, place in a large bowl.
  6. Add in olive oil, lemon zest, and juice, as well as salt and pepper. Toss to coat evenly.
  7. Remove asparagus from the bowl and place in bunches 7-8 each on a clean sheet tray.
  8. Now we will take our bacon and wrap the bundles. Using one piece of bacon per bundle gently wrap the bunch and place it back on the sheet tray.
  9. Place in the oven for 20-25 minutes.
  10. Remove, and sprinkle with parmesan.
  11. Turn your broiler on high and place the bundles back in the oven for 5 minutes to brown the cheese. Keep a close eye on it, as it can burn easily.
  12. Remove from the oven to cool slightly. Serve immediately and enjoy!
