Cheesy Thin Crisps

Cheez-its were a childhood staple of mine and one of my all-time favorite snacks. As such, I set out to make an SCD version at home, and who knew it would be so easy! Not to mention they taste JUST like the original. No, seriously you have got to try them! I was blown away that those clean ingredients could replicate such an ultra-processed snack. While this version may not be bright fluorescent orange, what they lack in food colorings they more than make up for in taste. Crunchy, cheesy, and salty, these crisps offer the perfect trifecta of flavors for when your snack cravings hit. Cheesy Thin Crisps

Serves 12 (10 each)

Ingredients:

2 cups almond flour

2 Tbsp. coconut flour 

2 Tbsp. butter or coconut oil 

5 Tsp. cold water 

1 egg white 

1 tsp. salt

½ tsp. baking soda

½ tsp. Mustard powder 

1 cup cheddar, shredded from block 

⅔ cup parmesan, shredded from block 

sea salt or Fleur de sel, for garnish

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat your oven to 350°F. Line a large sheet tray with parchment paper and set it aside.
  3. Set up your food processor with the standard blade attachment.
  4. Add in almond flour, coconut flour, butter, water, egg white, salt, baking soda, and mustard powder.
  5. Pulse 8-10 times or until dough forms.
  6. Add in both kinds of cheese and pulse 5-6 more times or until combined.
  7. Carefully remove the blade, and turn the dough out onto a large sheet of parchment paper.
  8. Shape into a ball and flatten.
  9. Place another piece of parchment paper on top and roll out to about â…› inch thick.
  10. Using a pizza cutter or crimped roller cut into roughly 1-inch squares.
  11. Gently transfer squares to your baking sheet in a single layer.
  12. Using a toothpick, poke a hole in the center of each square so they don’t puff up too much.
  13. Sprinkle them with sea salt or fleur de sel.
  14. Bake for 13-15 minutes or until crispy.
  15. Remove from the oven and cool completely before transferring to an airtight container. Enjoy!
