The Best One Bowl Almond Butter Pumpkin Chocolate Chip Blondies

Ingredients: 

10 oz. almond butter, no sugar added (just over a cup) 

¼ cup pumpkin puree, not pie filling

1 egg 

½ cup honey 

1 tsp. vanilla extract

½ tsp. almond extract 

½ tsp. baking soda 

½ tsp. salt 

¾ cup chocolate chips, 100% cocoa, no sugar added (optional *mSCD*)

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat your oven to 350°F. Line a 8×8 inch dish with parchment paper, set aside.
  3. In a large bowl add all ingredients, except the chocolate chips, and mix well.
  4. Fold in chocolate chips with spatula.
  5. Pour batter into your lined baking dish and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick can be inserted and removed cleanly.
  7. Let cool completely before slicing into 9 squares.
  8. Serve immediately and enjoy! Store in an airtight container for up to 5 days. Although they won’t last that long! 😉
