Dubai Inspired Chocolate Bar – mSCD, Paleo, & Dairy-Free!

If you’ve been eyeing the viral Dubai Chocolate Bar trend, this is your gut-friendly ticket to join in! These bars are all about luxe flavor combos and nutty, creamy textures encased in rich chocolate. These Dubai Inspired Chocolate Bars are my mSCD and Paleo spin on the luxurious treat—layered with creamy pistachio-tahini filling, and crisp coconut wrap “phyllo,” all encased in a rich dark chocolate shell.

These chocolate bars are equal parts indulgent and satisfying—a perfect sweet treat that feels decadent but with no additives. They’re smooth, nutty, a little crispy, extra creamy, and with real, whole-food ingredients that truly shine.

This recipe is mSCD (modified Specific Carbohydrate Diet) and Paleo-friendly. It’s also very special to me—because it happens to be my first paid recipe on Substack! If you’re already part of that community, thank you for helping me take this exciting step.

Not paid, don’t worry! There’s also free content for everyone—so no matter how you show up, I’m thrilled you’re here. 💜

So why Pistachio? Pistachios have such a unique, buttery sweetness that pairs beautifully with creamy tahini and cashew butter. They blend into a rich, naturally vibrant green nut butter that’s not only delicious, but visually stunning too! That said, here’s a tip: you will need to use 1 full cup of pistachios. Any less, and your food processor won’t have enough volume to create that silky smooth butter texture. Trust me, I tested it! Once blended into butter and mixed with tahini, cashew butter, honey, and toasted coconut, this mixture becomes the irresistible filling for our candy bars. All you need after that is a simple chocolate coating and a freezer to bring it all together.

I also use Pascha 100% Cacao Chocolate—it’s the only chocolate I’ve found that contains zero refined sugar and it checks all the boxes for SCD and Paleo. It also melts beautifully and gives these bars that deep, intense chocolate flavor.

In the original Dubai bar, shredded phyllo dough adds a delightful crunch. I’ve found that Thrive Market’s coconut wraps (non-affiliate) mimic that crispy texture beautifully—without a strong coconut flavor. Just toast, crumble or chop, and mix into the pistachio filling for layers of rich, satisfying texture.

These bars happen to look pretty impressive too—perfect for sharing or gifting, if you can resist eating them all yourself!
