Easy Overnight Oats Recipe: A Quick, Creamy Breakfast You’ll Love!

For anyone wondering: oats are a Modified Specific Carbohydrate Diet (Modified SCD) ingredient. I’ve been able to reintroduce several food groups with the help of a registered dietitian, and oats have become a regular part of my routine.
I always choose certified gluten-free oats to avoid cross-contamination, but that’s up to your preference and needs.

Why I Love This Flavor Combo
For this recipe, I chose to add banana, cocoa powder, and peanut butter. Honestly, is there a better combo? All the sweet, chocolatey, nutty flavors I crave at breakfast—yes, please!
For an extra decadent touch, try sprinkling a few 100% cocoa, no-sugar-added chocolate chips on top.
I also like to pulse the oats in a food processor before soaking them. It gives them a creamier texture and smaller particle size, which can be easier on digestion but this is an optional step.

Easy Chocolate, Peanut Butter, Banana Overnight Oats (mSCD)

Ingredients:
For the Oats:
1 cup oats, old fashioned rolled, gluten-free
1 banana, overly ripe
2 Tbsp. cocoa powder, no sugar added, 100% cocoa
2 Tbsp. peanut butter, no added sugars or preservatives
1 cup almond milk, no added sugars or thickeners
Toppings:
2 Tbsp. honey
1 Tbsp. peanut butter
1 banana, sliced
1 Tbsp. 100% chocolate chips, no sugar added (optional)
Method Of Prep:
- Gather and prep ingredients. I like to pulse my oats very lightly. This is a completely optional step, I just like the creamier texture when they aren’t whole. If pulsing, add oats to a spice grinder or food processor and pulse just a few times so you can still see big pieces, set aside.
- In a medium bowl, mash your banana.
- Add all other ingredients for the oats to the bowl.
- Stir well to incorporate.
- Pour oats into two separate 8 ounce jars. Seal, using a jar lid.
- Place in the fridge overnight (8-10 hours).
- Once time has elapsed, stir in your honey.
- Now, top with extra peanut butter, sliced banana, and chocolate chips if using.
- Serve immediately and enjoy!
