Notes & Helpful Tips
- Chocolate matters.
I use Pascha brand 100% cocoa chocolate chips, which are refined sugar–free and compliant with mSCD. Using a different brand or cacao percentage will affect sweetness and texture. - These are very rich.
With cocoa butter, butter, eggs, and honey, this is a nutrient-dense dessert. We often split one cake because it’s so satisfying. - The “lava” comes from timing.
Since there’s no refined sugar, these will continue setting as they rest. Pull them early for a molten center. - Honey behaves differently than sugar.
Honey adds moisture and softness but also encourages faster browning, rely on the jiggle test rather than the clock. - Toppings are optional, but lovely.
Fresh berries help balance the richness, and a light dusting of cocoa powder adds a classic elegant finish.
