There is one dessert that has become synonymous with Easter, and that’s carrot cake. It’s the kind of recipe that feels almost woven into the holiday itself. Festive, familiar, comforting, and always worth saving room for.

Growing up, Easter was a full day of traditions. Getting dressed up for church, coming home to Easter baskets, and gathering around the table with family for a meal that felt both special and relaxed. There was always a spread waiting after service. Savory dishes, fresh spring sides, and of course, something sweet to finish. And more often than not, carrot cake made an appearance.

This version takes everything I’ve always loved about that classic dessert and adapts it in a way that fits seamlessly into SCD and mSCD. And on a little personal note, this is actually my husband’s second favorite dessert, and he absolutely loved this mSCD version, which made it feel even more worth sharing.

It’s simple, made with real ingredients, and still captures that same nostalgic flavor and texture that makes carrot cake such a staple this time of year.

🥕What It Tastes Like

This carrot cake is soft, tender, and incredibly moist with a slightly dense, satisfying crumb from the almond flour, rich without feeling heavy. The edges bake up just lightly golden, while the inside stays delicate and almost melt-in-your-mouth.

Each bite is layered with warm, cozy spices. Cinnamon at the forefront, followed by subtle notes of ginger, nutmeg, and clove that build gently without overpowering. The carrots bake down into the cake, adding natural sweetness and a soft, almost silky texture throughout.

The raisins become plump and juicy as they bake, giving little bursts of sweetness, while the walnuts add a light crunch that contrasts beautifully with the softness of the cake. Hints of fresh orange zest and juice come through at the end, adding a brightness that lifts the richness and keeps every bite balanced.

And the frosting (my favorite part of any cake) ties it all together. It’s thick, creamy, and smooth with a slight tang from the dripped yogurt. It’s sweet but not overly so, with a clean, fresh flavor that complements the spices and richness of the cake rather than competing with them.
