Thyme Almond Flour Crackers

 Crisp, airy, crumbly, and crunchy, these crackers are pretty perfect. I love using them when entertaining, and telling people they are grain free after they try it. No one ever guesses they are made with almond flour! This is as pretty close to the original in flavor and texture as it gets! They’re so good they’re even kid approved! You can also add just about any flavor you like in this recipe, making it really versatile. Fresh and dried herbs do really well in this dough so have some fun and get creative! If you seem to be having a hard time separating the crackers before baking, flip them over onto another piece of parchment paper and slowly peel bottom paper off. The crackers will fall gently below to the other piece of parchment paper. You can then move them pretty freely without crumbling to separate them for baking.    

Thyme Almond Flour Crackers

Ingredients:

2 Tbsp. Thyme, fresh and chopped  

1 Cup Almond flour 

1 Tbsp. coconut oil, melted 

½ tsp Salt 

2 Tbsp. water, filtered

      Method Of Prep:

  1. Preheat the oven to 350° F.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl add thyme, almond flour, and salt. Mix together.
  4. Add in melted coconut oil and water. Mix until dough forms into a ball.
  5. Shape into a flat circle.
  6. Turn out onto the prepared baking sheet.
  7. Place another sheet of parchment paper on top.
  8. Using a rolling pin, roll out dough until it’s about â…› inch thick.
  9. Cut into squares using a pizza cutter.
  10. Separate squares so they are not touching, being careful not to stack crackers but set them in a single layer not touching one another.
  11. Bake for 20 minutes or until lightly golden brown.
  12. Cool, and store in an airtight container for up to a week.
