Apple and Spinach Chicken Croquettes

This recipe is a spin on the classic chicken croquette. I love incorporating seasonal flavors into whatever I’m making and this recipe is no exception! The apple adds a touch of sweetness to the patties that I just adore, and the spinach adds color and extra nutrients. This recipe is very versatile and can be easily modified. Feel free to get creative here! 

Apple and Spinach Chicken Croquettes

Serves 4 (3 small patties each)

Ingredients:

2 Chicken breasts, cooked and chopped 

1 Apple, peeled and small dice 

½ Cup spinach, fresh and chopped

1 Shallot, quartered 

⅓ Cup almond flour, (you may need a few more tablespoons) 

1 Egg 

1 Lemon, quartered (plus a squeeze for apples to avoid browning) 

Olive oil

Salt, TT

Black pepper, TT

      Method Of Prep:

  1. Preheat the oven to 375°.
  2. On a small sheet tray coat the chicken breast with olive oil, and season with salt and pepper.
  3. Bake for 25 minutes or until the internal temp has reached 165°F.
  4. While the chicken is baking, prep all other ingredients (don’t forget to squeeze some lemon juice on the apples so they don’t brown).
  5. Now set up the food processor with the standard blade attachment.
  6. Once cooked, remove chicken from the oven and cool enough to dice.
  7. Add cooked and diced chicken, shallot, egg, almond flour, (start with ⅓ cup), salt, and pepper.
  8. Pulse until combined, but not smooth. You still want some texture here.
  9. Take some of the mix in your hand and press together. If it forms a nice ball and stays that way, you’re good to go. If it crumbles very easily add 1 Tbsp of almond flour at a time until you can form a ball.
  10. Now stir in by hand the apples and spinach.
  11. Shape into 3-inch patties.
  12. Get a large sauté pan (or two if you want to go twice as fast).
  13. Heat over medium high heat with a good covering of avocado or olive oil on the bottom of the pan. Be sure to do a test patty first to make sure the cakes stay together well. If not, add more almond flour.
  14. Pan fry the patties, about 4 minutes on each side, or until crisp and golden. (remember the chicken is already cooked, so you are really just trying to cook the shallot, apple, spinach, and egg). Don’t overcook the patties or they will start to dry out.
  15. Serve with a fresh lemon wedge and enjoy!
