Coconut Flour Pizza Crust

Happy Friday! For as long as I can remember on Friday nights my family ate pizza for dinner. This tradition started early in my childhood, and I always looked forward to it. Sometimes we would make our own pizzas with fresh dough, and sometimes we would order it from one of many pizza chains. However, since cutting out grains over two years ago, I couldn’t find a suitable replacement. I searched far and wide for a new pizza crust, but they all were soggy, couldn’t stand on their own, or tasted like cardboard. Well folks, this is finally it! This crust is crispy on the outside, fluffy on the inside, and isn’t soggy! It took lots of experimenting and a few failed attempts, but I couldn’t be happier with the final texture and flavor. I know you will be too! 

Feel free to top with whatever you would like! Get creative and let the kids help too! This recipe is fun for the whole family. If I feel like diverting from the obvious tomato sauce and cheese, I like to top mine with my cashew basil pesto, red onion, gruyere cheese, and egg. Finished with a dash of aged balsamic and some fresh arugula. The possibilities are endless, have fun with it! This crust also reheats well the next day. It won’t be quite as crispy, but it still holds shape and tastes delicious! I’m quite happy to say I can now carry on the Friday night pizza tradition while staying true to my SCD lifestyle. Coconut Flour Pizza Crust

Beginner

Ingredients:

4 Eggs, beaten

2 Tbsp. water

2 Tbsp. honey

1 tsp. oregano, dried

1 tsp. basil, dried

½ tsp. salt

½ tsp. baking soda

¾ Cup + 2 Tbsp. Coconut flour, sifted 

¼ Cup + 2 Tbsp. Olive oil  

Topping (optional):

1 cup SCD tomato sauce 

5 oz. mild cheddar cheese, shredded from block 

      Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 400°F. Line a pizza tray with parchment paper.
  3. In a large bowl whisk together eggs, water, honey, spices, and salt.
  4. Add in sifted baking soda and coconut flour. Stir until well incorporated.
  5. Add in oil and mix until dough forms.
  6. Rest dough for 5-8 minutes. This will allow the coconut flour to properly absorb the liquids.
  7. After resting, turn the dough out on your lined pizza tray.
  8. Lay another piece of parchment paper on top and use a rolling pin to flatten out the dough to about a ½ inch thick.
  9. Then use your hands to shape the edges of the dough so they reach the edge of the tray and resemble a circle.
  10. Par bake for 12-15 minutes or until starting to brown.
  11. Remove and add tomato sauce and toppings.
  12. Bake for an additional 5 minutes or until the crust edges crisp up and cheese melts.
  13. Remove from the oven and slice into eight pieces. Enjoy!
