Easy Mug Cake for One

This mug cake is a perfect sweet treat when you don’t feel like baking. With only 10 simple ingredients you probably already have, this cake is designed for simplicity, and it’s seriously delicious too! After much experimenting, I was finally able to achieve that perfect moist cake texture. Bright lemon zips through the soft vanilla cake, with bursts of sweet blueberry throughout, this just might become your favorite single serve dessert! 

I do want to note that if you want to make more than one, be sure to make them individually, and don’t combine all the ingredients until you’re ready to put them in the microwave. If you make them in advance all at once, the baking soda will finish reacting with the lemon juice and it will not cook right. I also would like to touch on the importance of the egg being well beaten before adding. If you do not beat it well ahead of time and make sure it is evenly incorporated in the cake, you will get bits of cooked egg white in your cake. Also, check your microwave wattage! Mine is 1100 watts, but if yours is lower, make sure to extend your cooking time. Follow these tips, and you will have a perfect single serve piece of cake every time! 

Easy Mug Cake for One

Ingredients:

1 Tbsp. olive oil 

2 Tbsp. almond flour

2 Tbsp. coconut flour

1 tsp. lemon zest (zest of 1 lemon) 

¼ tsp. baking soda 

1 oz. lemon juice (about 1 lemon) 

1 tsp. vanilla extract 

1 egg (beaten separately) 

¼ Cup blueberries, fresh 

1 Tbsp. honey

      Method Of Prep:

  1. Gather and prepare all ingredients. I highly recommend measuring everything out separately and having it ready to go, so the baking soda doesn’t lose its potency. Also, I would like to note that when picking a mug be sure to use one that has a thick base and tall sides so the oil doesn’t burn, and the cake doesn’t boil over.
  2. Now we’re ready to make the cake! Add all ingredients, in the order listed.
  3. Once everything has been added, take a fork and stir to incorporate all ingredients. Do not overmix! If you stir too vigorously the baking soda will rise too much and cause the cake to boil over.
  4. Microwave the mug for 2 minutes (1100 watts). Remove the mug carefully, as it is hot, and turn the cake out onto a plate to cool a bit or eat right out of the mug!
  5. Serve immediately and enjoy!
