Easy Plum Upside-Down Cake

Plums are one of my favorite late summer fruits to pick up at the Farmer’s Market, and there are so many ways you can use them! This cake is as beautiful as it is scrumptious and makes the perfect light dessert or afternoon snack with tea. By laying the plums at the bottom and flipping it when we are done, you create a gorgeous mosaic, almost stained-glass effect, that is breathtaking and unique every time! Remember to use ripe but firm plums for this cake, as overly ripe ones will become mushy after baking. This plum upside-down cake is elegant yet rustic, displaying classic flavors and techniques, but with SCD ingredients. Go ahead and save this recipe, you’ll thank me later!    

Easy Plum Upside-Down Cake

Ingredients:

3 red plums, pitted and sliced 

1 ¼ cup almond flour 

½ cup coconut flour 

½ tsp. baking soda 

⅓ cup honey 

¼ cup butter, unsalted & melted 

½ cup almond milk, no thickeners 

2 Eggs 

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 350°F.
  3. Line an 8-9 inch square or circle pan with parchment paper and grease the sides with butter or coconut oil, set aside. I like to use a springform pan so it comes out easier after baking, but a glass or ceramic square or circle dish will work just as well.
  4. Slice plums and lay face down on the bottom of the pan until you have the bottom covered.
  5. In a large bowl add almond flour, coconut flour, and baking soda.
  6. Whisk to incorporate and get out any lumps in the flour.
  7. Add in honey, butter, almond milk, and eggs.
  8. Stir until completely combined.
  9. Spoon the batter over the plums, and gently spread to even out.
  10. Bake for 30-35 minutes or until golden and cooked all the way through. You can test this with a toothpick, if it comes out clean the cake is done.
  11. Remove from the oven and let the cake cool for 12-15 minutes.
  12. Place a serving plate over the cake and carefully flip upside down, allowing the cake to come out cleanly. If using a springform, unclasp the ring and remove it first before placing the plate on the cake and flipping.
  13. Slice into eight servings and serve immediately. Enjoy!
