Fun & Easy Tropical Smoothie Bowl

Spring is in full swing and spring break is here or just around the corner. Bring the beach to you this year with this fun and easy smoothie bowl. This is a great recipe to make with the kids, and a good way to get them some extra servings of fruit. This really is sunshine in a bowl with tropical flavors to spare. Fruity banana, sweet and tart pineapple, and juicy mango make way for nutty coconut, and decadent dates. All blended together and topped with goodies for one sweet treat! Fun & Easy Tropical Smoothie Bowl

Ingredients:

For the Smoothie Bowls: 

1 bananas, frozen 

1 cup pineapple, frozen 

1 cups mango, frozen 

½ cup coconut milk, no additives or thickeners

½ cup SCD 24 hour yogurt 

2 Medjool dates, pitted   

 

For the Toppings:  

1 kiwi, sliced 

¼ mango, fresh and cubed

¼ cup pineapple chunks 

1 Tbsp. coconut, shredded or in flakes, unsweetened

  Method Of Prep:

  1. Start by mashing and freezing your banana, followed by cutting and freezing the pineapple and mango chunks.
  2. Freeze for at least 4 hours or until solid.
  3. Gather and prep ingredients.
  4. Place all ingredients for your smoothie bowls in your high-speed blender.
  5. Blend on high until smooth and combined. You may need to stop once or twice to scrape down the sides.
  6. Pour smoothie mixture into two bowls.
  7. Top with kiwi, mango, pineapple, and coconut or whatever else you like.
  8. Serve immediately and enjoy!
