Heart Shaped Coconut Macaroons

Coconut macarons are one of my favorite treats! Crispy, sweet, and tropical, what’s not to love? I have fond memories of enjoying all sorts of fun flavors of this treat in the Florida Keys on vacation. While enjoying the scenery and local shops, we found this quaint bakery offering all sorts of scratch made treats. The overwhelming smell of coconut, key lime, and ocean air was intoxicating. We got all sorts of specialty flavors (key lime included of course!) and took our midafternoon desserts to a nearby bench to be enjoyed. I always think of the fun Florida Keys vacations I got to take with my Aunts and Nana when enjoying this treat. While drawing on this memory, I wanted to make a SCD friendly version that I can enjoy as an adult. Veolia! Heart Shaped Coconut Macaroons

Ingredients:

2 ½ Cups Unsweetened coconut, shredded

4 Egg whites

1½ Tbsp. Honey 

      Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 350° F.
  3. Get a large baking sheet and line with parchment paper or a silicone baking mat.
  4. Separate egg yolks from whites.
  5. Add egg whites to a medium bowl.
  6. Next, add the honey to the egg whites and whisk until the honey is mostly dissolved and the egg whites start to become frothy.
  7. Add the shredded coconut to the egg white mixture and fold the coconut in until fully combined.
  8. Use a heaping tablespoon to portion out little balls.
  9. Place them about ½ inch apart.
  10. Now go back and shape each ball into a heart. You can freestyle these by shaping them with your hands, or you can use a small heart shaped cookie cutter to press them gently into shape.
  11. After shaping, place in the oven and allow to bake for 20-25 minutes, or until golden brown.
  12. Remove from the oven and allow to cool completely before serving.
