Heirloom Tomato & Grilled Peach Salad with Walnut Basil Pesto

Peach season is here, and while many recipes with peaches are sweet, you can make just as many savory dishes too. This salad is a great example of just that!

Using peak season peaches, tomatoes, and basil this salad is an ode to the end of summer. Juicy and sweet peaches are grilled to perfection adding a lovely caramelized flavor to this salad. Earthy and ripe heirloom tomatoes make the base, perfectly harmonizing with the nutty basil infused pesto. The walnuts add a nice crunch while the mint adds a clean refreshing quality that ties it all together.

Heirloom Tomato & Grilled Peach Salad with Walnut Basil Pesto

Ingredients:

For the Pesto: 

1 cup basil, packed 

¼ cup parmesan, grated from block

2 cloves garlic

¼ cup walnuts

1 Tbsp. lemon juice, fresh 

¼ cup olive oil 

½ tsp. salt

¼ tsp. pepper 

 

For the Salad: 

2-3 large heirloom tomatoes, halved and sliced 

2 peaches, white or yellow, halved and pitted

2 Tbsp. mint, chopped or chiffonade 

2 Tbsp. walnuts, chopped 

2 Tbsp. olive oil 

½ tsp. salt

¼ tsp. pepper

  Method Of Prep:

  1. Gather and prep your ingredients.
  2. Start by making the pesto. Add all ingredients to a food processor.
  3. Pulse until combined until beginning to get smooth, but still allow for some texture. Set pesto aside.
  4. Preheat your grill to 425°F.
  5. While heating, half and slice your heirloom tomatoes and place in a medium serving bowl.
  6. Half and pit your peaches next, and place them in a separate bowl.
  7. Add half of your olive oil, salt, and pepper to your peaches and toss to coat.
  8. Then, add your remaining oil, slat, and pepper to your tomatoes and toss to coat, set aside.
  9. Once the grill is preheated, grill peaches for 2-3 minutes each side or until well marked and soft. Remove and set aside.
  10. Slice peaches and add to your bowl with your tomatoes.
  11. Chop your mint and walnuts. Add them to the bowl as well. Toss to coat.
  12. Add your pesto and gently toss once more.
  13. Serve immediately and enjoy!
