It’s beginning to feel like spring has sprung in the South, and it really is just around the corner! Peas are just about to come into season, and they are one of my favorite vegetables. As such, it was only right to make this classic Italian side dish my own. Traditionally, Italian peas are cooked with onions and garlic. However, there is also an Italian side dish called peas and pancetta. Since pancetta is not SCD legal, I have married the two recipes and added uncured bacon instead. Sweet peas, salty bacon, and savory onions all come together to make one deliciously simple side dish that goes well with anything Italian. Try serving it alongside my Oven-Baked Chicken Parmesan, Butternut Squash Gnocchi, or The Perfect Spaghetti and Savory Meatballs for a complete and tasty meal!
Italian Peas with Bacon
Serves 4

Beginner
Ingredients:
1 ½ Tbsp. olive oil
1 cup onion, small dice
2 cloves garlic, minced
16 oz. peas, fresh or frozen
2 Tbsp. chicken stock
½ tsp. salt
¼ tsp. pepper
½ lb. bacon, uncured, no sugar added
Method Of Prep:
- Gather and prep ingredients.
- Preheat the oven to 375°F and line a sheet tray with foil, set aside.
- Lay bacon strips out on your sheet tray with some space in between them and bake for 15-18 minutes or until very crispy, remove from the oven to cool.
- Bring a large sauté pan over medium heat. Add in oil and allow to heat.
- Then add in your onions. Sauté for 5 minutes or until becoming translucent.
- Add in garlic and sauté for another minute.
- Add in peas and stock.
- Bring to simmer for 5 minutes or until peas are cooked through and tender.
- Add in seasoning. Chop bacon and stir in.
- Serve immediately and enjoy!
