Bursting with zesty bright lemon, bits of earthy poppyseeds, and chewy cookie dough texture, these energy bites will awaken your senses while giving you fuel for whatever your day has ahead.
You can always replace the cashew butter with a different nut butter if you prefer. Depending on the consistency of your nut butter you may need to add another teaspoon or two of coconut flour if your ‘dough’ seems runny. If you can not tolerate seeds, you can simply omit the poppy seeds. These energy bites are just as delicious without them.

No-Bake Grain-Free Lemon Poppy Seed Energy Bites

Ingredients:
1 cup almond flour
2 Tbsp. coconut flour
2 tsp. poppy seeds
¼ tsp. salt
1 cup cashew butter, no additives
¼ cup + 1 Tbsp. honey
2 tsp. lemon zestÂ
3 Tbsp. lemon juice, fresh
 Method Of Prep:
- Gather and prep ingredients.
- In a large bowl whisk together almond flour, coconut flour, poppy seeds, and salt.
- Add in cashew butter, honey, lemon zest and juice.
- Stir to combine until a scoopable ‘dough’ forms.
- Using a small cookie scoop or a tablespoon, scoop dough and roll into 16 balls using your hands.
- Refrigerate for at least 30 minutes or until firm.
- Serve immediately and enjoy! Be sure to store these in an airtight container in the refrigerator.
