Patriotic Red, White, & Blue Coconut Berry Layered Popsicles  

Happy Memorial Day! Celebrate our nation’s colors with these fun and refreshing red, white, and blue popsicles. Strawberry makes the red layer, coconut makes the white, and blueberries make the blue. All layered in a bright and festive display, these will mesmerize any guest!

Growing up, my favorite popsicles were the kind with real fruit pieces in them, so I have chosen to leave the strawberry and blueberry layers with some texture, but if you want them to be smooth and more of a puree you can blend them separately before adding to the mold. Depending on the size of your popsicle molds, you may not yield as many popsicles per recipe. If your coconut milk is separated, blend the entire can first until smooth and then only use the amount you need, add honey and blend again.

Patriotic Red, White, & Blue Coconut Berry Layered Popsicles

Ingredients:

For the Red: 

1 ½ cups strawberries, frozen or fresh 

2 Tbsp. honey

 

For the White: 

4 oz. coconut milk, no thickeners or added sugars

1 Tbsp. honey

 

For the Blue:

2 cups blueberries, frozen or fresh 

2 ½ Tbsp. honey

  Method Of Prep:

  1. Gather and prep ingredients.
  2. In a small pot add strawberries and 3 tablespoons of honey. Bring to a boil and reduce to a simmer for 5-8 minutes or until beginning to resemble jam. Note this will take a few more minutes if you are using frozen fruit. Set aside to cool.
  3. In another small pot add blueberries and honey. Repeat instructions for strawberries, set aside.
  4. Lastly add your coconut milk and honey in your high-speed blender. Blend on medium speed for 15 seconds.
  5. Scrape down the sides and then blend oh high for 25-30 seconds or until smooth.
  6. First pour your strawberry in the molds, pouring â…“ of the way full. Freeze for 15 minutes.
  7. Next, pour in your coconut layer again, only filling a â…“ of the way full. Freeze for 15 minutes.
  8. Lastly, pour your blueberry layer until the mold is filled.
  9. Place the sticks in and freeze for at least 4 hours or until frozen solid.
  10. To remove from the mold, and run plastic under warm water for 20-30 seconds.
