Father’s Day Pimento Cheese Stuffed Burgers

Celebrate Father’s Day in style with these pimento cheese stuffed burgers! Some of you may be wondering what exactly is pimento cheese? Well, before moving to the South I had never heard of it either. Pimento cheese is a mixture of shredded cheddar, cream cheese, mayonnaise, cayenne pepper, and pimento peppers. The spread is often eaten by itself as part of a cheese tray, cold on bread as a sandwich, or used as a cheese topping for burgers. It’s creamy, cheesy, a little spicy, and definitely a Southern delight. Stuffed and topped on a freshly grilled burger is definitely my favorite way to enjoy this Southern classic and I know it will be yours too!

                    

Father’s Day Pimento Cheese Stuffed Burgers

Ingredients:

For the Pimento Cheese: 

½ cup mild cheddar, shredded from block 

¼ cup SCD dripped yogurt (cream cheese) 

⅛ cup mayonnaise  

1 cloves of garlic, minced and crushed into a paste 

¼ tsp. cayenne pepper  

2 oz. jarred pimento peppers, drained and diced 

½ tsp. salt

¼ tsp. pepper 

For the Burgers: 

2 lbs. ground beef 

1 tsp. salt

½ tsp. pepper 

  Method Of Prep:

  1. Gather and prep ingredients.
  2. 24 hours prior, drip ½ cup of SCD yogurt using a cheesecloth lined strainer over a bowl in the refrigerator. This will make our ‘cream cheese’.
  3. Next, make your mayonnaise if needed.
  4. Once the cream cheese and mayonnaise are ready, we can make the pimento and assemble our burgers. In a large bowl add all ingredients for the pimento cheese.
  5. Mix together with a spatula until evenly distributed, set aside.
  6. In a medium bowl add ground beef, salt, and pepper. Mix until incorporated.
  7. Divide beef into four balls. Working with one ball at a time, we will first divide the ball in half and make two patties.
  8. Lay the first patty down and place 1 teaspoon of pimento cheese in the middle using a cookie scoop so it’s a nice round shape. Place the other patty on top of the cheese.
  9. Now, firmly but gently, pack together and seal the sides to make a regular looking burger.
  10. Repeat until all four have been made.
  11. Preheat your grill to 450-500°F.
  12. Grill burgers for about five minutes on each side or until the internal temperature reaches 165°F.
  13. Top with remaining pimento cheese if desired.
  14. Serve immediately and enjoy!
