Quick & Easy Korean Inspired Beef Bowls

These Korean inspired beef bowls will be your go-to easy weeknight meal the whole family will love!

You can also add any vegetables you like, or whatever you have on hand which makes this recipe great for using leftover produce too.

Quick & Easy Korean Inspired Beef Bowls

Ingredients:

For Korean Beef: 

2 lbs. ground beef 

½ cup honey 

2 Tbsp. red wine vinegar 

1 Tbsp. apple cider vinegar 

1 Tbsp. white wine vinegar 

2 Tbsp. beef bone broth 

2 tsp. sesame oil 

1 Tbsp. garlic, minced (6-8 cloves) 

1 Tbsp. ginger, minced 

1 small red chili, dried and ground (or ¼ tsp. red chili flake)

¼ cup green onions (only the white part), sliced

 

For Bowl: 

1 cup cucumber, quick pickled (see below)

1 cup red onion, quick pickled (see below) 

1 cup shredded carrot

4 avocados, sliced or mashed 

8 cups cauliflower rice 

Sesame seeds, garnish 

Green onions, sliced for garnish (greens saved from above)

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Start by quick pickling your cucumber and red onion, set aside. (NOTE: When using the quick pickle recipe use the hot method. Be sure to omit the mustard seed and dill. The full recipe can be split between the red onion and the cucumber. Place each sliced vegetable in a pint jar for pickling.)
  3. In a small bowl mix together honey, vinegars, bone broth, sesame oil, garlic, and ginger, and chilis.
  4. In a large pan add ground beef and cook until it reaches 165°F.
  5. Once cooked add in sauce and bring to a simmer for 4-5 minutes or until sauce is beginning to get thick.
  6. Remove from heat, and set aside.
  7. While meat is cooking, prepare your cauliflower rice and other ingredients for bowls.
  8. Sevre Korean inspired Beef over cauliflower rice, and alongside pickled vegetable, shredded carrot, and avocado.
  9. Top with sesame seeds and green onion. Serve immediately and enjoy!
