Quick & Easy SCD Peppermint Holiday Fudge

To me, nothing quite says it’s the holidays like fudge. Soft, dense, sweet squares infused with cool and refreshing peppermint make for a classic holiday treat loved by young and old alike.

This fudge recipe is easier than traditional fudge as it requires no candy thermometer. Simply melt the cocoa butter, and whisk in other ingredients!

Since this recipe is so simple, it’s a great one to have kids help with and make some holiday memories together.

I like to use artisana raw cashew butter as it is very smooth and only contains raw cashews. Be sure the cashew butter you get doesn’t have refined oils (canola ect.) or additives to it. Need to make your own cashew butter? No sweat, click here and scroll down to the third paragraph.

Quick & Easy SCD Peppermint Holiday Fudge

Ingredients:

¾ cup cocoa butter, measured before melting, raw  

½ cup honey 

½ cup cashew butter, raw

1 tsp. vanilla extract 

½ tsp. peppermint extract 

¼ tsp. salt 

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Line a small rectangle or square dish, about 4in x 2in or 4in x 4in dish with parchment paper, set aside.
  3. In a small saucepan, melt cocoa butter over medium-low heat.
  4. Add in honey and cashew butter.
  5. Carefully whisk until completely dissolved over low heat. Cut off heat if the mixture starts to bubble.
  6. Turn off the heat and add in extracts and salt. Whisk to combine.
  7. Pour fudge mixture into a lined pan of choice.
  8. Leave to set up in the refrigerator for two hours.
  9. After fudge has set, cut into 18 squares and enjoy!
  10. Store leftovers in an air-tight container for up to 5 days. Happy Holidays!
