Quick & Easy St. Patty’s Day Irish Champ SCD Style

Celebrate St. Patty’s Day this year with something green and traditionally Irish; Champ!

This classic Irish side dish is usually made with potatoes, milk, scallions, and butter. To make this recipe SCD I replaced the potatoes with cauliflower and milk with a non-dairy nut milk.

This SCD champ is luxuriously smooth and creamy, packed with vitamins, and is the perfect companion to my Easy Slow Cooker SCD Roast or really any main dish! Happy St. Patty’s Day! Quick & Easy St. Patty’s Day Irish Champ SCD Style

Ingredients:

1 head of cauliflower, cut into florets

2 Tbsp. nut milk, unsweetened, no thickeners (I use almond) 

½ cup scallions, chopped plus extra for garnish  

2 Tbsp. butter, melted

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Bring 4 quarts of water to a boil.
  3. Place cauliflower in boiling water and cook until tender, about 10 minutes.
  4. Once cauliflower is cooked, drain water and place cauliflower in a high-speed blender with your nut milk.
  5. Blend until smooth. You may need to stop and scrape down the sides.
  6. Once cauliflower is blended, pour into a serving bowl. Add scallions and salt to taste.
  7. Stir until well combined.
  8. Make a well in the middle of the mash and add melted butter.
  9. Garnish with more scallions.
  10. Serve immediately and enjoy!
