Grain-Free St. Patty’s Day Key Lime Cookies

Happy St. Patty’s Day! Celebrate all things green with these festive and tasty key lime cookies. Grain, refined sugar, and artificial color free you can feel good about serving these! Bright, zesty, and tart key lime comes through the soft dough, while the smooth icing provides sweetness and a velvety rich finish.

If you can’t find key limes at your local store, or they aren’t in season yet you can always use regular limes in their place. Grain-Free St. Patty’s Day Key Lime Cookies

Ingredients:

For the Cookies: 

2 cups almond flour

½ cup coconut flour, plus more for dusting  

¼ cup honey 

1 Tbsp. key lime juice, fresh 

1 egg 

1 Tbsp. butter or coconut oil, melted 

2 tsp. key lime zest, freshly grated 

½ tsp. baking soda 

¼ tsp. salt

For the Icing: 

⅓ cup coconut butter, melted 

¼ cup honey 

4 Tbsp. key lime juice, fresh 

Extra key lime zest for garnish (optional)

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Combine all dough ingredients in a food processor for 20-30 seconds for the smoothest dough. You can also mix them in a stand mixer until combined. However, they won’t be quite as smooth.
  3. Wrap the ball in plastic wrap and refrigerate for 20-25 minutes.
  4. Line a sheet tray with parchment paper, set aside. Preheat the oven to 350°F.
  5. Using a small cookie scoop, scoop out cookies.
  6. Roll the dough into a ball, then place on a cookie sheet and push down with your palm in the middle to create a disc and spread out the cookie.
  7. Bake for 10-12 minutes or until lightly golden and cooked through.
  8. While cookies bake we will make the icing. Begin by melting your coconut butter in the microwave.
  9. Once melted, add honey and lime juice. Mix to incorporate.
  10. Let cool slightly until it begins to thicken up.
  11. Remove cookies from the oven to cool.
  12. Once cool, spoon icing on top of each cookie and top with extra lime zest for a festive treat!
