Notes
Make it SCD: Omit the tamari and use dripped SCD yogurt in place of Greek yogurt.
Swap the protein: Ground turkey or beef both work well here. Turkey keeps it light, while beef adds a richer flavor.
Yogurt tip: If using yogurt in the sauce, make sure it’s nice and thick like Greek (especially if not using dripped yogurt) to keep the sauce creamy and not too thin.

Quick Sheet Pan Green Goddess Chicken Meatballs
Serves 4

Total: 25 min
Ingredients:
For the Meatballs:
1 Lb. ground chicken
½ cup almond flour
½ cup grated Parmesan
½ cup onion, finely minced
2 cloves garlic, minced
1 tsp. Tamari soy sauce
¼ cup parsley, chopped
2 tbsp. chives, chopped
For the Sauce:
½ cup Greek yogurt, or SCD dripped yogurt
½ cup mayonnaise, no added sugars
1 ½ Tbsp. lemon juice, fresh
½ cup arugula, packed
¼ cup parsley
2 Tbsp. chives
1 clove garlic
1 ½ tsp. salt
½ tsp. pepper
Method of Prep:
Gather and prep ingredients. Preheat your oven to 400°F. Line a sheet pan with foil or silicone mat and set aside.
In a large bowl add all ingredients for meatballs. Mix until well combined.
Once combined, roll into 1 inch meatballs and place them on your lined sheet pan about ½ inch apart.
Repeat until all meat is rolled into balls. You should get about 20.
Bake the meatballs for 15-18 minutes or until 165°F.
While the meatballs are cooking we can make our sauce. Add all sauce ingredients to a blender and blend on high until combined, about 30 seconds, set aside.
Once meatballs are done, remove them from the oven, and place them on your serving dish.
Top with green goddess sauce, and serve immediately. I like to serve these meatballs over rice or cauliflower rice for a complete meal. Happy Spring!
