🦃 Quick & Simple mSCD Turkey Gravy (Gluten & Grain-Free)

A Cozy Holiday Essential

What’s Thanksgiving without a generous pour of rich, golden gravy? It’s the finishing touch that ties the entire plate together; from the turkey to the mashed cauliflower (or potatoes!) and everything in between.

When I transitioned to the SCD, I was determined not to miss out on this holiday staple, and do have a fully SCD gravy recipe. The secret in both versions of my gravy lies in honoring the method while swapping the ingredients. Both recipes follow the classic French technique of making a roux, traditionally a mix of butter and flour, but gives a it a twist using coconut flour (SCD) and potato starch (mSCD) for that same silky texture and depth of flavor. The potato starch really makes all the difference here. It gives that familiar smooth and thicker texture we all know, love, and associate with gravy.

I love using Bonafide’s of Fire & Kettle’s turkey (or even chicken) bone broth* when I don’t have pan drippings. It’s rich, deeply savory, and perfect for holiday cooking. But any high-quality poultry broth will do beautifully here. (*non-affiliate)

🥄 Notes & Substitutions

  • Butter: Use your favorite dairy-free butter substitute for a vegan version (if you are more advanced mSCD).
  • Broth: Turkey bone broth adds richness, but chicken or vegetable broth also work well.
  • Coconut flour: This gives the roux body and a light nutty flavor — but it browns fast, so don’t walk away while it’s toasting!
  • Potato starch: Be sure to use 100% pure potato starch (not potato flour) I use Bob’s Red Mill*. It’s what gives the gravy that perfect glossy thickness and finish. *(not affiliate)
