SCD Blueberry Scones

 These blueberry scones are just as scrumptious as they are satisfying with flakey layers of buttery blueberry goodness! Even better? They are super simple to make! Perfect to brighten up brunch with the girls, afternoon tea, or a bridal shower. These classic yet sophisticated scones will be your go to for breakfast and brunch entertaining. These scones are also so close in flavor and texture to its traditional flour and sugar counterpart your taste buds might not be able to tell the difference, but I guarantee your gut will! Feel free to add any berry or fruit you like in the same proportion as the blueberries to mix up this recipe. SCD Blueberry Scones

Ingredients:

1 ¼ Cups almond flour

½ Cup coconut flour 

1 tsp. baking soda

½ Cup ghee, butter, or coconut oil, melted

2 Tbsp. honey 

1 egg

¼ Cup almond milk, no thickeners 

1 Cup blueberries, fresh  

      Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 325°F. Line a baking sheet with parchment paper, set aside.
  3. In a large bowl whisk together flours and baking soda.
  4. In a medium bowl combine ghee, honey, egg, and milk.
  5. Whisk together to evenly incorporate the wet ingredients.
  6. Slowly add the wet ingredients to the dry. I usually add the wet mixture in quarters.
  7. Mix together until dough forms.
  8. Gently fold in blueberries.
  9. Place dough on a lined baking sheet.

  10. Shape into a large flat circle about 8-9 inches in diameter.

  11. Cut into eight equal pieces.

  12. Gently spread the scones apart to bake, leaving about 1 inch between them.

  13. Bake for 25-30 minutes, or until cooked through and lightly browned.
  14. Remove from the oven to cool slightly and enjoy! These scones can be enjoyed hot or at room temperature.
