The Best Southern-Inspired Grain-Free Peach Cobbler

Summer is here and peach cobbler is a Southern classic enjoyed all season long! The perfect balance of rustic down-home cooking, meets quintessential Summer dessert. Juicy sweet peaches tossed in floral honey, and baking spices come together to make the base of this cobbler. Topped with a warm, nutty, and crispy cobbler crust, you’ll be instantly transported back to your grandma’s kitchen table.

Feel free to use white peaches, nectarines, or even plums to make this cobbler your own. If using fresh fruit I recommend peeling them for the best cobbler filling consistency. This cobbler is the best day of, but can be stored for a few days in the fridge. If you have leftovers from the fridge, warm up the cobbler for the best flavor.

The Best Southern-Inspired Grain-Free Peach Cobbler

Ingredients: 

For the Peach Filling: 

2 ¼ lbs. peaches sliced, frozen or fresh (about 10)

2 Tbsp. butter, cubed 

2 Tbsp. honey  

½ tsp. cinnamon,ground 

½ tsp. nutmeg, ground 

⅛ tsp. clove, ground

 

For the Cobbler Crust: 

⅔ cup almond flour 

½ cup coconut flour

½ cup butter, melted 

1 tsp. vanilla extract, 

1 tsp. cinnamon, ground

½ tsp. nutmeg, ground

⅛ tsp. clove, ground

¼ cup honey

  Method Of Prep:

  1. Gather and prep ingredients. Start by slicing your peaches if using fresh.
  2. Place sliced peaches in a cast iron pan over medium heat.
  3. Add in butter, honey, vanilla extract, cinnamon, nutmeg, and clove.
  4. Mix to evenly coat, cook for 15-20 minutes if frozen, or 10-12 if fresh. The peaches should start to soften when finished.
  5. Set aside while you work on the topping. Preheat the oven to 350°F.
  6. In a large bowl add both almond and coconut flour and whisk together.
  7. Add in butter, vanilla extract, spices, and honey. Mix together well with a spatula.
  8. Spread crumble topping on top of peaches evenly with some peaches peeking through.
  9. Bake for 25-30 minutes or until the topping is golden brown and the peach mixture is bubbling.
  10. Remove from the oven and cool slightly for about 5 minutes. Serve immediately, and enjoy!
