The Creamiest Dairy-Free Eggnog

In early December when we would decorate our Christmas tree as a family, it was always tradition to drink eggnog and admire our work when we were done. You could find a carton of eggnog in our fridge basically until New Years as we would enjoy it all month long. Wanting to still participate in this tradition, I set out to make the perfect SCD dairy-free eggnog and I’m so happy to say I have done just that! 

This dairy-free version is just like I remember; creamy, smooth, thick, decadently rich, ladened with warm baking spices and a touch of sweetness that reminds you it’s a Holiday treat! I normally make a 3-4 times batch to have on hand for the Holiday season. This eggnog will keep in the fridge for up to a week. For my non-SCD friends, feel free to add some brandy or dark rum for extra cheer! Happy Holidays!      

                                                                        

The Creamiest Dairy-Free Eggnog

Ingredients:

2 egg yolks

¼ cup honey 

1 ½ cup cashew milk, no additives 

1 tsp. vanilla extract 

½ tsp. nutmeg 

¼ tsp. cinnamon 

⅛ tsp. salt

2 cinnamon sticks, for garnish (optional)

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Set up your stand mixer with the whisk attachment and add in egg yolks.
  3. Whisk on medium until they become light in color 1-2 minutes.
  4. Add in honey and whisk until fully incorporated, about 1 minute.
  5. In a small saucepan add cashew milk and heat over medium until it comes to a simmer.
  6. Pull cashew milk off the heat and start your stand mixer on low.
  7. Slowly pour in the cashew milk a few tablespoons at a time until it is all added.
  8. Now, pour this mixture back into your saucepan and whisk over medium heat for 3-4 minutes or until you reach 160°F. Do not let it come to a full boil as it will be too hot for the egg yolks.
  9. Remove from heat and whisk in vanilla extract, spices, and salt.
  10. Pour into a heat proof container, let cool to room temp, and refrigerate for 3-4 hours or until completely chilled. It will thicken up once it has chilled and set.
  11. Once it’s ready, pour into glasses and garnish with more nutmeg and a cinnamon stick. Enjoy!
