‘White Chocolate Mocha’ Latte

When I was teenager, I spent lots of time and most of my allowance at Starbucks. Besides the Caramel Macchiato, I loved their White Chocolate Mocha Lattes. Now, more than a decade later, I still hold a soft spot in my heart for this treat, although since starting SCD I no longer frequent Starbucks. I have recreated this treat, and I have to say it is pretty amazing! Chocolate, and white chocolate are not allowed on SCD, but cocoa butter is. It has the same texture as white chocolate and is just as rich and creamy. It makes for a perfect substitution, and gives this latte its velvety decadent smoothness. I like to blend this latte for at least 15-20 seconds so it creates that nice foam we all know and love from a good latte. You can alternatively use a milk frother if you have one. I like to add some extra shavings of cocoa butter on top so it resembles the original. However, the cocoa butter will melt so it is up to your discretion. Also, since the almond milk has no thickeners, it will begin to separate from the coffee after about 20 minutes. This is normal, and if it happens just stir it a bit to reincorporate. If you drink your lattes like me though, it won’t be around that long! Cheers to a latte classic!   

                        

‘White Chocolate Mocha’ Latte

Ingredients:

8 oz. hot coffee, brewed to preferred strength   

12 oz. almond milk, no added sugars, no thickeners

¼ cup cocoa butter, melted, plus extra for garnish

¼ cup honey

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Start by brewing coffee to preferred strength.
  3. In a small pot add almond milk and cocoa butter.
  4. Warm until milk is hot and all the cocoa butter has melted.
  5. Stir in honey until dissolved. Then, add in coffee.
  6. Set up your high-speed blender and pour in all ingredients.
  7. Blend on high for 15-20 seconds or until cocoa butter is fully incorporated and a nice foam begins to form.
  8. Pour liquid into cups, holding back the foam with the spoon. Once liquid is poured in, use the spoon to scoop out the foam and place on top.
  9. Sprinkle with cocoa butter shavings if desired, serve immediately, and enjoy!
