To celebrate the one year anniversary of my blog Abigail Marie the Chef with IBD, I wanted to share your most loved recipes over this last year. It has been an amazing journey thus far and I have been able to connect with so many wonderful fellow IBD warriors! I have been humbled and honored to be a part of your lives and to be able to share the SCD diet, my recipes, new scientific research, and personal story. Most of all I want to say THANK YOU for all your support over this last year! Since I am no longer able to work as a professional chef because of my UC, it means the world to be able to reignite my passion for food and pursue my culinary dreams through creating and sharing my SCD recipes with you all.   1. SCD Ice Cream Cones & Bowls- These waffle cones are scrumptious and the perfect complement to any type of ice cream! These cones and bowls whip up in minutes with only a few ingredients you probably already have, and are a huge hit with kids and adults alike. 

  2. Coconut Flour Pizza Crust- For as long as I can remember on Friday nights my family ate pizza for dinner. This tradition started early in my childhood, and I always looked forward to it. However, since cutting out grains over two years ago, I couldn’t find a suitable replacement. I searched far and wide for a new pizza crust, but they all were soggy, couldn’t stand on their own, or tasted like cardboard. Well folks, this is finally it! This crust is crispy on the outside, fluffy on the inside, and isn’t soggy!

  3. Asian Inspired Lettuce Wraps- Lettuce wraps are the perfect warm weather food! They are light, crunchy, sweet, and savory and make the perfect lunch or appetizer for entertaining. I even love these wraps on picnics or beach trips!

  4. SCD Eggplant Parmesan Stacks- Eggplant Parmesan is an Italian classic and something I had missed having since starting SCD. After searching for a recipe that was compliant, and coming up empty-handed, I decided to make one myself. I’m thrilled to say this version is just as crispy, cheesy, and all-around delicious as the original! ‘Buon Appetito!

  5. SCD Blackberry Galette- The idea for this galette dessert is nothing new, and is believed to date back to the Neolithic period. Making it SCD was a bit of a challenge, but I couldn’t be happier with the results! The crust encapsulating the sweet berries is buttery and crisp while still holding its shape. The bright lemon and mint compliment the blackberries so well it takes them to the next level!
