Easy Pistachio Crusted Honey Orange Salmon

Mild, earthy pistachios perfectly oven-roasted atop flakey rich salmon with bright zesty orange, sweet honey, and pungent garlic make for the ultimate marriage of flavors to spice up any weeknight meal. When buying your pistachios, be sure to get raw, not roasted. Roasted pistachios are not SCD legal as they contain a starch coating that may or may not be listed on the label. You can find raw pistachios at your local health food store or online. If your filets are rather small you may want to adjust the baking time to 12-13 minutes to ensure you don’t overcook your salmon. I like serving this with my Cilantro Lime Cauliflower ‘Rice’ or Lemon Garlic Asparagus for a complete and effortless meal.      

                                                  

Easy Pistachio Crusted Honey Orange Salmon

Ingredients:

4 Salmon filets 

½ tsp. salt

¼ tsp. pepper 

1 Tbsp. honey  

1 tbsp. Dijon mustard 

2 tsp. orange zest 

1 Tbsp. orange juice, fresh squeezed 

2 cloves garlic, minced 

¾ cup pistachios, raw, chopped

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 350°F. Line a sheet tray with parchment paper, and set it aside.
  3. Place salmon, skin side down onto the lined sheet tray and pat dry with a paper towel. Season with salt and pepper.
  4. In a medium bowl whisk together honey, Dijon, orange zest, juice, and garlic until combined. Fold in chopped pistachios.
  5. Spoon mixture evenly over the salmon filets, then gently press the mixture onto each piece of salmon with your hands to ensure it sticks.
  6. Bake for 15 minutes or until salmon is easily flaked with a fork.
  7. Remove from the oven and serve immediately. Enjoy!
